摘 要: 丙烯酰胺(acrylamide,ACR)是一种常见的食品和环境污染物,神经毒性是其最主要的毒性效应。ACR对糖代谢的影响在其产生神经毒性的过程中发挥了一定的作用,但其如何影响能量代谢尚未见详细报道。本文拟结合相关文献,阐述ACR影响葡萄糖能量代谢的确切机制及可能危害,以期为ACR毒性研究提供新见解,并为探索拮抗ACR毒性作用的天然、无毒或低毒药物提供理论基础。 |

Abstract: Acrylamide (ACR) is a common food and environmental pollutant, neurotoxicity is its most important toxic effect. The effect of acrylamide on the glucose metabolic process plays a certain role in its neurotoxicity, but how it affects energy metabolism has not been reported indetail. This article is intended to elaborate the exact mechanism and possible hazards of ACR on glucose energy metabolism in combination with relevant literature, thereby provide new insights for the study of acrylamide toxicity and also provide a theoretical basis for exploring natural non-toxic or low-toxic drugs that antagonize the toxicity of acrylamide. |
